Lemon Bars: Gluten-free / Regular

I made Lemon Bars today.   

I made one batch, your typical, nothing special, Granny's Lemon Bars.  They came out very yummy.  Everyone liked them.  

Then I went and attempted gluten-free, Stevia, Keto-approved ingredients, healthy Lemon Bars.  The crust for it came out very delicious!!!   However, the rest of the dessert was a fail.   The lemon mix turned out doughy and the flavor was definitely off.   It was more like a kick in the face sour lemon meets doughy [not gooey] blah.   I will definitely have to play around with that mix and figure out a better measurement.   

So, I threw out the whole gluten-free batch.  My dog managed to open the lid on the trash can and devoured the entire dish!!!   He was the only one that liked it.  I googled all the ingredients.   Turns out he can eat everything that was in it!!   I now know what I will start making for puppy treats.  

I am still learning all the process of substitutions for each ingredient.    I think next time I will make petit fours.
