Tacos Al Pastor

Mmm...  Last night was Tacos Al Pastor.   So good.  I love them with homemade guacamole, cilantro, queso fresco and fresh squeezed lime juice.  

Joey says he is not a fan of mexican food.  However, I can get him to eat it as long as it is not in the form of a taco/burrito and he loves the guacamole it make.  

Yesterday got kind of chaotic.  Scarlette didn't nap very well.  So, I had a very cranky baby girl.   

Joey and I were able to peel and dice up 6 lbs of apples (gala/fuji) and made a few apple pie bites and 1 giant apple pie.   

I used a gluten-free flour and sugar in the apple mix.  The crust was a gluten-free brand that I found at Smith's.   Actually turned out delicious.   

What are your favorite types of tacos?  What do you like in your guacamole?  Favorite apple pie?  What type of crust?
