Shortbread cookie attempt... Failed :(

I love love love macadamia nut shortbread cookies.  So, I found a few on Pinterest that looked yummy.   First one? Fail.   3 simple ingredients: Slightly colder than room temp butter, Powdered sugar and flour.  How can one mess that up?  The cookies looked so cute!  Smelled like butter cookies.  Sprinkled with a little coconut and tiny chocolate chips.   Went in for the bite.  :/   Nope.  Tasted like super bland, flour.   My kitchen is a mess, there is flour is everywhere.  House is getting hot and humid.  Ugh... what the hell? I am going in for round 2.   So this time I use just a little more butter at a softer temp.  I put it in the blender and whisk it like a punishment.  Once it starts looking all Home&Garden worthy (that pretty whipped butter look) I slowly add the powdered sugar.  Once it is mixed in whipped and fluffy, I start slowly, very, very. slowly and delicately put the flour in with the butter and powdered sugar whipped mix.   Now, we have a beautiful batter.  Mmmm... So while it is on its last 2 minutes of whipping, I add 1 tbsp of coconut flavoring.   I add the mix to a piping bag and make these lovely looking ruffly-flower short bread cookies.  I put it in the preheated oven 325*.     They are supposed to be in there for 15 minutes.  All is fine.  I check on them at the 10 minute mark and see they are losing their shape :/   Not good.   15 minutes, the timer goes off.  Now I have what looks like flat, paper then rice wafers.  WTF?!!   I take a deep breath.  I let them cool and I have Joey try one.  They are so fragile and delicate.   He barely touched the cookie and it disintegrated!!!   So he gets a great idea.  Grab a fork and scoop it up.  Once it hit his tongue it dissolved.  Gone.  It happened so fast he couldn't remember if he actually even put it in his mouth.   So I let everyone in the house try this batch.   Ummm they tasted better than the first but they just turned to dust.  I gave up.   I will try shortbread again another time.   

 

Scarlette has been asking for Blueberry cupcakes.  So I made them from scratch.  I pulled out an old recipe that is originally for muffins.  I used cream cheese. buttermilk and sour cream in place of some of the muffin ingredients.  I also only used egg whites.  I folded in fresh blueberries.   Perfect.  Scarlette ate 2 right away.  I didn't even get to top it with the homemade lemon buttercream frosting I made.  She said it was the best thing I had made all day :)  She requested tomorrow we do yoga and stay out of the kitchen lol.   Sounds good to me.
